Recipe: Healthy Oatmeal Chocolate Chip Cookies

I love a good chocolate chip cookie. Even better when it's made with healthy ingredients. Here is a recipe I've created just trying something new. It's versatile so you can swap for different ingredients if needed.


What you'll need:

  • Mixing bowls, measuring cups, measuring spoons, baking sheet pan and parchment paper


Ingredients:

  • 1/2 cup Almond Flour

  • 1/2 cup Almond Butter

  • 1/2 cup rolled oats

  • 1/4 cup Organic Maple Syrup

  • 1/4 cup coconut flakes

  • 1/4 cup raw cacao nibs

  • 1 Organic Egg

  • 1/2 tsp baking powder

  • 1/4 tsp sea salt

  • 1 tsp vanilla extract


You can swap raw cacao nibs for chocolate chips or Just Date chocolate chips. If you do that, I would leave out the maple syrup as the chocolate chips will sweeten the cookie.


Directions:

  1. Preheat oven to 350 degrees F

  2. Mix all ingredients together

  3. Drop rounded tablespoons of dough onto parchment paper baking sheet

  4. Bake 10-12min


These will come out nice and chewy, but you can cook them longer for crispier texture
